Craggy and delicious these simple cookies deserve a spot in your repertoire. Recipe makes 10 moderately sized cookies, but can easily be increased to suit your needs.
Mix
Cream 48g shortening (or butter/margarine with 62g sugar.
Mix in 1 beaten egg and 1/4 tea vanilla.
Mix in 175g flour, 1/8 teaspoon of salt, 1.5 teaspoons baking powder and around 1 tablespoon of milk if mixture is too dry to hang together.
Stir in 28g dried cranberries and 28g white chocolate chips.
Shape
Can be refrigerated, wrapped in plastic, at this point until baking time.
Form into 10 equal sized balls.
Place on a sprayed baking sheet and squish with fork to about 3/8" thick.
Bake
Bake at 375F for 12-14 minutes.
Note
For a more decadent version, up the quantity of cranberries and chips to taste. You could also try mixing chocolate chips along with or instead of the white chocolate.
